Memory Jar — A Kimchi & Rio Zine Workshop with Damchi Kimchi
Join us for a special collaborative workshop with Gigi from Damchi Kimchi, where food, memory, and print come together. This short workshop is a mini version / preview of our upcoming longer course in September!
In these two afternoons, you'll learn how to make your own jar of kimchi. A Korean fermentation tradition that, for many, carries the taste of home. For Gigi, kimchi is more than just a dish; it’s a way to hold onto memories of family, togetherness, and comfort.
As we chop, salt, and ferment, we'll reflect on the personal stories and emotions tied to food. What memory would you like to preserve in a jar?
To capture this experience, we’ll also guide you in creating a small Riso-printed zine, a visual keepsake of the feelings, tastes, and stories that food can bring back.
How does the workshop look like?
We’ll begin with an introduction to fermentation and the idea of food as a vessel for memory: your very own ‘memory jar’.
Next, Gigi will guide you through her hands-on kimchi-making process using her special recipe and your chosen vegetable.
We are using 2 days in order to give the fermentation process time to work.
While the kimchi rests, we’ll turn to print. You’ll get a short introduction to the Risograph and work on a small zine that reflects a personal food memory. Something meaningful, funny, or nostalgic.
Also in this special event we will also get to try our kimchi and some traditional Korean dishes!
Everyone will leave with their own Riso-printed mini zine with recipes to make at home to keep or share with friends and family, as well as a batch of fresh kimchi!
The workshop also includes a light lunch and kimchi tasting, so we can enjoy some of Gigi’s flavours together.
No previous experience with fermentation or Riso needed! Just bring a vegetable you’d like to ferment and a memory you’d like to share.

About Damchi Kimchi
Damchi Kimchi is a kimchi producer based in Amsterdam, run by gigi since 2023.
Damchi takes its name from the Korean verb 담다 (dam-da)—a word used specifically for making kimchi. It also echoes the last syllable of Amsterdam, reflecting our mission to connect Korean food heritage with the local community through fermentation.
Gigi was born in Seoul, raised in New Zealand, and now call Amsterdam her second home. She is currently working as a freelance programmer in the cultural sector. In her free time she host kimchi workshops, dinner parties or flip kimchi pancakes at pop ups. Like every Korean, she grew up eating kimchi daily—but for her, kimchi has always
been more than just food. It traveled with her wherever she moved, carrying memories of home. When she moved to Amsterdam six years ago, she started making kimchi for herself and friends, sharing not just a dish but a piece of her memory of home & family.
Damchi Kimchi is more than a business to Gigi; it’s a community. It’s a way for her to connect with others through food, culture, and a shared longing for home.
